Spinach, Dried Cherries and Feta Stuffed Chicken Breast
Ingredients: 4 thawed boneless chicken breast, 1/2 a bag of spinach, 1/2 a cup of dried cherries, 1/2 a cup of crumbled feta cheese, salt and pepper to taste
Directions: Preheat oven to 375 degrees..slice down the side of each chicken breast to form a "pocket", simply stuff each chicken breast with a layer of spinach, dried cherries and feta cheese. Secure the side of the chicken breast with toothpicks. Sprinkle salt and pepper on top of stuffed chicken breast. Place stuffed chicken breast in a greased casserole dish/ baking pan. (I use olive oil to grease dish) Bake chicken breast for 45-50 minutes or until juices run clear. Serve with a smile and a glass of chilled Chardonnay :-)
